Talking a Fish Dinner fit for any gourmet restaurant ( and i didnt even know lol)

I did this last night for my mother and I.. and we thought were were eating in a gourmet restaurant.

Walnut Crusted Mahi Mahi Grilled with baby sweet potatoes, baby broccolini and crumbled goat cheese (the goat cheese was surprisingly DELICIOUS!!!!)

I cant write with correct measurements because I was cooking fast lol We were trying to eat before our 8 o clock NO MORE FOOD time and we try to go for a walk afterwards!

MAHI MAHI
olive oil spray
crushed garlic
oregano
mrs. dash
handful of walnuts crushed in a bag

Baby (mini) sweet potatoes
olive oil spray
4 baby sweet potatoes cut up

Baby Broccolini
8 sprigs
goat cheese
thyme
tsp of water

Preheat oven to 375 degrees
Wash Thoroughly the baby sweet potatoes and put them on a lightly sprayed cookie sheet (the ones i used i got from Trader Joes.. they are extremely small and a goodsize basket of them cost 2.19 USD)
bake till tender while cooking evrything else. they packaging says dont even bother with butter because they are very sweet and tender.

mahi mah can be a nice size that can be cut into nuggets .. you dont need much because its a meaty fish. I sprayed my iron skillet with Light Olive Oil Spray and added the crushed garlic.. then added the mahi mahi with a dash of oregano .. i seared it on both sides for aboutt 6 to 8 minutes each. LOL (weird part) .. when one of the nuggets is done.. put in the bag of heavily crushed walnuts and lay on baking pan.. continue till all are crusted.
Put in broiler part of oven at broil for 10 minutes. ( you can smell the walnuts cookiing .. mmm)

clean and respray the iron skillet. I added a lil thyme and the broccolini then i added a tsp of water to sauteed it up.

All the food was cooked at the same time. On a small plate i added all the hot food and put a lil goatcheese on the broccolini and the sweet potatoes.

YUMMY .. the walnuts even pulled it together and I even shocked myself and our quick walk was great !
