Okay, I pulled this out of Cooking Light where they take a recipe, hack most of the calories and the fat out of it, and it's still supposed to taste good. The original recipe was 723 calories and 40.8 grams of fat per serving!!
Creamy Fettucine with Shrimp and Bacon - Yield 8

Transfer pasta mixture to a platter, or divide evenly among each of 8 plates; sprinkle evenly with remaining 1/2 cup parsley and crubmled bacon. Serve immediately.
Yield: 8 servings
(serving size: about 1-1/4 cups pasta and 1-1/2 teaspoons parsley)
*As far as replacing 2% milk with skim, it might be worth a try, but i don't think the sauce would be an alfredo texture.
