Crockpot Recipes
Does anyone know of any low-fat crocpot recipes? I love to use my crocpot because of it's convenience, but the only thing that I really know how to cook in it that is healthy is chicken!!! Needless to say, I am getting pretty tired of chicken. Any suggesstions??

Something I have made in the past is to slow cook a pork tenderloin. They are generally low in fat - check your label to make sure you have a lean cut. Slow cook a 2 pound tenderloin on low for about 8 hours. I put a dry rub on it, or if I don't have any, some BBQ sauce. After it's done, flake it apart with a fork or slick reeeeeealy thin and put BBQ sauce on it and heat it back up. Yum!

I just did a pork loin in the crockpot yesterday. I did it with a jar of saurkraut and caraway seed. Was really good.

Thanks so much for the responses! I also have made black beans in my crocpot, and they are always delicious!!! Seems like all of the recipes lately are high in fat. I think I am going to look for a cook book with low fat crocpot recipes. I will let you guys know if I find anything worth while!!

I also do apples in the crockpot.
Apples peeled and sliced. Place in crockpot with enough water to cover bottom of pot. Add cinnamon, Splenda or Brown Sugar and vanilla. Cook as long as you like them. I guess you would call this Stewed Apples. My Mom always made these on top of the stove. But vanilla is my addition. |
That sounds absolutely delicious!!! I will have to try that very soon...is it like something that you leave in all day? or something for just a few hours?

"Fix It And Forget It - Light" is a great new book in that line. All crockpot recipes, from appetizers to desserts and everything in between. Gives nutritional info with each recipe. More of the "home cookin'" type recipes and they are all from average people like you and me, not big time chef's. I got it for $15.95.

I make beef stew in the crockpot. Cut up lean beef, onions, potatoes, carrotts, etc and top with a can of tomato soup. Let it cook all day.
I also made Swiss steak today. Small Sirloin steaks, onion, and a can of seasoned tomatoes. Yum, can't wait. |

I used red delicious, and saved a step, using cinnamon hot candies (sugar & cinnamon all in one!), vanilla & water. They turned a pretty pink color & were loved by everyone.

Crock Pot Recipes
I have one of JoAnna M. Lund's Cookbooks, A Potful of Recipes. Here is a very easy recipe for chicken breast.
Saucy Italian Chicken 4 Servings 16 oz. skinned and boned uncooked chicken breast. cup into 4 pieces 1 cup (8 oz can) Hunt's Tomato Sauce 1 teaspoon Italian Seasoning 1 Tablespoon Pourable splenda or Sugar Twin 1 teaspoon dried onion flakes 1. Spray a slow cooker container witrh butter flavored cooking spray. 2. Enenly arrange chicken pieces in prepared container. 3. In medium bowl, combine tomato sauce, Italian seasoning, Splenda and onion flakes. 4. Spoon sauce mixture evenly over chicken pieces. 5. Cover and cook on LOW for 6 to 8 hours. when serving, evenly spoon sauce over chicken. Each serving equals 143 Calories - 3 gm Fat - 24 gm Protein - 5 gm. Carbohydrate 425 mg. Sodium - 1 gm Fiber Jan |
