I got this out of my 'Better Homes and Gardens, Healthy Family Cookbook'.
*4 slices sourdough bread cut 1 inch thick
*1/2 of an 8 oz package of light cream chesse, softened
*3 tbs strawberry or raspberry fruit spread
*2/3 cup skim milk
*1 egg white
*1 tsp granulated sugar
*1 tsp vanilla
*1/2 tsp ground cinnamon
*2 cups sliced strawberries
*2 tbs powder sugar
1) Cut each bread slice in half crosswise. With a sharp knife, cut a horizontal slit in each half slice to make a pocket. In a medium bowl, combine cream cheese and fruit spread. Stir until smooth. Spread 1/8th of the mixture inside each bread pocket. Pinch edges of bread together to hold filling.
2)In a shallow bowl wisk together milk, egg, egg white, granulated sugar, vanilla, and cinnamon. Dip filled bread slices in egg mixture to coat. Spray a large non-stick skillet with nonstick spray coating. Cook about 6 minutes or till golden brown, turning once. Top with strawberries and sprinkle with powdered sugar. Serves 4.
