Speaking of avocado...
There used to be an arcade up the street from my place and there was a little cafe in the upstairs part called the Silverball Cafe. They used to serve these yummy sandwhiches that DH and I would both order - we went there when we were first dating
and still get cravings for them to this day!
Silverball pita sandwhich:
1/2 a large pita (you can use wholewheat if you like)
some alfalfa sprouts
cheddar cheese (you can use low fat or veggie/soy cheese)
Open each pita pocket and spread one side of the inside of each pocket with hummous. Add alfalfa sprouts, sliced cheese, avocad and lastly the tomato.
Serve with a side salad or some cut up celery, carrots and/or cucumber and some lf dressing on in a small dish.
