Default low carb pancake recipe

i have this pancake recipe i want to share, it's great, and easy:

2 large eggs
1/4 cup whole milk ricotta cheese (i use part skim)
2-4 tbsp ground flax seed (i use flax meal i found at the health food store)
1/8 tsp salt
1/2 tsp baking powder
1 tsp vanilla (i do this but it's optional)

whisk all ingredients together and drop onto hot, greased griddle (i use fat free non-stick spray, butter flavored). flip when thoroughly set to cook second side. serves 2.

Nutritional info: 236 calories (less with part skim ricotta)

8 gm carbs
5 gm fiber
14 gm protien

it comes out kind of like french toast in consistency and flavor. don't try to double the recipe though, when the flax meal sits in the egg and ricotta mixture for more than a few minutes, it gets very thick. you have to mix it and drop it on the griddle right away. i had this this morning with strawberries, sugar free maple syrup and a few "Boca" veggie sausage links. and very healthy too!
