I made Hot and Sour soup, and added cabbage so it would be more filling. It hit the spot on this blustery day.

1/4 cup sauer kraut, 1/2 cup pistachios, 1/2 cup sliced cucumbers, 1/4 cup chocolate pudding. Just packed a few things I liked in a lunch box today. Feeling nice and light!

I looked at our cafeteria menu last week and decided I would buy my salad today, $3 for a cobb salad (without avocado, I'm allergic). I brought my own dressing - mixture of 15g light ranch and 30g of light champagne vinaigrette.

I can't wait! It's a big calorie lunch for me - around 400, but the rest of my day is pretty low, so it fits perfectly.

1.5 cup of sliced raw cucumber, .5 cup cottage cheese, 1 pudding, 1 biscuit = 413 calories.

I brought an orange to snack on later, as I don't know when I'll be leaving work this afternoon.

I made for lunch today 2 inches of a chicken cheese steak,less rice noodle soup,, a small garden salad with avocado, cucumber, red onion and sauteed spinach in olive oil and garlic

I didn't have dinner last night, so my husband said I HAD to bring his meal he made last night to try it.

1/2 cup of jasmine rice
1/2 of a crumbled Italian turkey sausage sauteed with mushrooms, scallions and peppers
Jamaican jerk/bbq (he makes the best rubs!) rubbed and roasted green beans and butternut squash

This week it's leftover walnut chicken/brown rice for two days and leftover beef fajitas for two days.

It's pretty much leftovers most days since there are just two of us at home now. When we have dinner out or when there are no leftovers, I always have freezer soups and Amy's/Red's burritos. There's usually some type of greens in the fridge as well.
