I had scrambled egg whites with leftover salmon and scallions. Seriously my favorite breakfast. I had to take home salmon from last night's Easter dinner so my daughter could eat some - she loves it and I rarely buy it - but I had to steal just 2 oz out of her HUGE filet

Strawberry, banana and spinach smoothie.

I tried coconut oil instead of flax seed oil in my smoothie today. Tasty! I really didn't expect the coconut flavor to come out of the oil so much. Hopefully it's as filling as the flax seed oil. I got it really cheap at Costco

4 sliced sauteed mushrooms mixed with marinara with cumin and cayenne, and a runny egg all topped with parsley and aged parmesan. Shakshouka inspired, but pre-work rushed.

2 thick slices of tomato topped with a "creamed spinach" (fresh spinach wilted and mixed with a wedge of laughing cow), and a runny egg, plenty of fresh cracked salt and pepper. It came to me in a dream last night and I immediately knew it was my breakfast. Even my kid liked it!

^ That does sound awesome. Love the "creamed spinach" idea! I've been on a serious spinach kick lately.

The usual smoothie for me today. No added fat, though. As much as I was enjoying those and they were keeping me fuller longer, I was going way over my daily calories.

Scrambled eggs with some turkey sausage and potatoes mixed in, guac and cilantro.

Cup of tea with milk.

About 430 calories total.

I'm so in love with cilantro and guac with my foods. It's bordering on an addiction.

Nonameslob it WAS good. I wish I had more spinach, but that was the last of my bag. I'm grocery shopping tonight, and I have plenty of things on my menu plan - including more of that breakfast.

Snickus I love guacamole - unfortunately somewhere in my late 20's I developed an avocado allergy and it hurts my life lol

Today I had three slices of tomato topped with a runny egg, cracked salt, pepper, and basil.

Munchy - An avocado allergy! That's a culinary tragedy. You have my deepest condolences. That creamed spinach breakfast sounds delicious and right up my alley. Unfortunately a few years ago spinach started upsetting my stomach. I have no idea why. I used to eat a ton of spinach but now I probably haven't had any in a couple years. That breakfast is so appealing to me though, that I'm gonna give it another go! I'm hoping my stomach has forgotten that spinach had become its nemesis.

Sandwich - Whole grain English Muffin, 1 fried egg, 1 turkey sausage, guac, tomato, cilantro. I love breakfast sandwiches.

1 cup of coffee with milk.

About 400 cals total.
