I think tonight will be Salsa Chicken - I throw chicken breasts, salsa, taco seasoning, black beans, peppers, and corn into a pan to simmer. Add a little chicken broth if it needs it. Stir in just a touch of sour cream at the end, top with cheddar cheese and hot sauce, over brown rice. I'll probably skip the cheese and rice for me, and eat it with spinach.

Last night we had "Chinese" takeout (I had drunken noodles with chicken, not Chinese at all!). Ugh, that made me feel awful. We don't do takeout often and now I remember why.

I was reminiscing about Paris last night and decided to make croque madame open-face sandwiches tonight. I had half of what hubs had and put rest in container for my lunch tomorrow....Yum!

Last night my husband made three kinds of chicken breast: BBQ Jerk, black pepper sauce with scallion and carrot, and balsamic with roasted red pepper and basil, I made a cauliflower, tomato and goat cheese casserole, and the two of them had it with my yellow rice.

Tonight is eggplant and zucchini spinach-stuffed rollatini.

The family is doing "walking tacos" so I'm using the turkey taco meat to make a taco salad.

Harvest salad with pears from our tree, dried cranberries, walnuts, and feta cheese with balsamic vinaigrette

Canadian maple beans (dried from last year's garden)

Hubs also had beef stroganoff.

Last night we had ham/pea in lemon/parm sauce over pasta.

Tonight, I can't make my mind up. It's either going to be seafood-free jambalaya (ham, chicken, Andouille sausage) or chicken fajitas. Probably chicken fajitas since my salt intake was up yesterday. I'll save the jambalaya for Thursday when it's supposed to rain

This week we've been all over the place with meals.
Saturday night - British sausage rolls and creamed baby red potatoes, apple crisp
Sunday night - leftover freezer pork/beef meatballs w/red sauce & cheese in subs
Monday night - beef fajitas, apple crisp
Tuesday night - pub night, grilled spicy/sweet wings & "pub" fries
Wednesday night - something with chicken breasts (went to Costco yesterday)
