Last night I had zucchini noodles and chicken cacciatore with mushrooms from my freezer. Tonight I think I'll make a BBQ chicken pizza on flatout with onions, mushrooms, peppers, and jalapenos.
Two portabella mushroom caps topped with basil, tomato, and shredded mozz.
I bought them prepared from Wegmans. Their site states each cap has only 120 cals, which blew my mind because they tasted much more filling than that. I was so suspicious I even googled the separate ingredients to make sure that was correct. Sorry to doubt you, Wegmans. This was delicious but more pricey than I'd like from the prepared mark-up, so I'll buy the separate ingredients and prepare myself. I really enjoyed this.
Tonight is turkey taco bowls - ground turkey, taco seasoning, black beans, corn, and salsa cooked together and served over brown rice. I'll probably add some broccoli slaw to mine.
Tonight we're having spinach/mushroom turkey burgers (I finely chopped the veg into the patties last week for the freezer). My little one will have hers on a bun and I'll have mine lettuce wrapped with cheese
Roasted cauliflower on the side for both of us, plus a corn on the cob for her.
I'll probably make zucchini noodles with red peppers, scallions, leftover turkey taco meat with jalapeno spreadable cheese melted in, and topped with cilantro. I love 10 minute meals.
Tonight I had salad (kale, spinach, sprouts, tomato and cucumber) with tacos. The tacos were 3 five inch fresh white corn tortillas, guacamole, salsa and shredded roast chicken. I bought a whole roasted chicken from a local butcher and shredded it. Sooo good, simple, and low cost!
I'm going to have chicken breasts stuffed with spinach, cheddar cheese, onion, and bacon.
Sides: mixed veggies and 1/2 a sweet potato with clarified butter and pepper.
Last night I had a zoodle bowl with yellow peppers, roasted red peppers, mushroom, scallion, spinach, and cherry tomato, all with two wedges of spreadable cheese.
Not too shabby for 130 calories.

Munchy, it looks like there's a sauce of some sort on there which I imagine is your spreadable cheese. Could you share how you do that?
