Chicken breast and a homemade sugar-free peanut butter cup.

I'm lying. It was bakers chocolate melted in a saucepan with some Swerve and peanut butter dumped in and eaten straight out of the pan. How pathetic is it that I'm 40 and that's my idea of a reasonable dinner?

Violette-I've had many less than ideals dinners I've found posting on here helps a bit though with staying closer to plan.

noname-zoodles are the best. Luckily where I am decent zucchinis are pretty easy to come by all year round.

Baked sweet potato, vegan chili, veggie cheese slice.

I had a half of a boneless skinless chicken thigh, and one singular burnt end. I made an early dinner for the little one and my fiance went out, so I just skipped a real meal.

Today I plan to have more of the leftover chicken cacciatore with mushrooms with a full serving of no-yolk egg noodles. My calorie counts have been dangerously low lately so I want to make sure I have a substantial meal planned.

GF pizza toasts with vegan cheese and kalamata olives. Last week I used a large GF tortilla to make "pizza" but it wasn't that filling and a lot of calories, so I'm seeing how my GF bread works

I have used so many different GF wraps and tortillas, but they're so high in calories...enter the Aldi GF tortilla for 110 calories each!

Grilled salmon with shrimp, pepper, onion, and mushroom kebabs.

Tonight is salsa chicken in the crockpot (chicken, black beans, mushrooms, salsa, etc.) over steamed shredded broccoli and cabbage.

Since I didn't have any chicken cacciatore two days ago (fiance surprised me by making spiced boneless/skinless chicken thighs, light blue cheese mashed potatoes, and sauced sauteed assorted mini peppers), I froze it into containers.

I pulled one out last night and ate it with steamed broccoli slaw then mixed in a little bit of Greek yogurt and some sriracha. Mmmm!

Muncy-Oh I just assumed it was a brand. Yeah I've never seen an Aldi store before :/ I tried looking up the nearest one on their website and searched google but nothing came up. Hmmm. Well I'm just going to dig through the freezer section of the big health food market here and see if I can find something lower calorie

Yesterday was African peanut stew and tonight will most likely be the spinach salad from trader joes.

Friday we went out and I had an Italian pork grinder (sliced pork, spinach, garlic, mozarella). Saturday I made baked buffalo wings. Sunday we had corned beef with cabbage, potatoes and carrots.

Definitely look forward to my fast today. I don't usually tally my calories on the weekend so needless to say I was a bit blown away.

Tonight will be stuffed chicken breasts and I'll probably have some leftover cabbage.

Ah, that sucks! It's a "discount" grocery store where everything sold is their brand. Aldi owns Trader Joe's and it's the cheapest place to get groceries including organic, gluten free, etc.

I didn't have dinner last night, but I did pick at the chicken thighs my fiance cooked for the week. Tonight I have no idea what's on my menu. I may make a shepherds pie with cauliflower topping or I'll make a flatbread pizza or quesadilla with all of our chicken.

Last night I made broiled honey-soy salmon fillets and sweet potato fries.

Then we met some friends for drinks so I had a few beers and we split a crab dip appetizer. Mmm. Glad I made a small dinner.

Tonight will be chicken breast stuffed with spinach and mozzarella, with roasted broccoli.

I have a busy night tonight, so I'll probably eat something from the freezer. I know I have a few different varieties of chili and a few stews. Maybe the stew my fiance made with chicken, green beans, sweet potatoes, and jerk sauce.

Last night was chicken breast stuffed with feta and roasted red peppers. Side of spinach sauted in garlic and butter. Plus a small salad.

Tonight will be broiled salmon, broccoli, and noodles (probably a mix of "real" noodles plus zoodles) and a honey soy sauce.
