Out to lunch with my fiance. Went to our favorite vegan chinese place. I had the house tofu with hot sauce, some brown rice, a spring roll with a little dipping sauce, and some mixed buddhist delight mixed vegetables. So good! I'm having leftovers for dinner probably Was a -3 and ended +3. JUST barely kept myself from reaching a +4 lol.

Went to one of my fav vegan places and got the blackened tempeh tacos with some sweet potato fries. Was a -2 and ended +3.

Had leftover spiralized potato "pizza". Very satisfying and will keep me full till dinner since I won't be able to eat again till after 8. Was a -3 and ended +3.

munchy-That's where I got the idea! I love inspriralized

Today's lunch was again brought to you by inspiralized! lol She has a recipe for huevos rancheros that I modified a bit.
Spiralized potato "tortilla" topped with two eggs, 2 slices of daiya provolone cheese, 2 tblsp salsa, 2tblsp toffuti sour cream substitute, and hot sauce. It was a ridiculous amount of food but I finished it all haha Very very filling. Too filling actually. Ate more than I was hungry for but again I won't be home till later tonight and have a very busy afternoon and evening so want to make sure I've eaten enough.
I was a -3 and ended +4

Well I'm inspiralized to check out this website! Those recipes sound yummy.

I cooked 2 large chicken breasts, bone in, and ate them both. And a few cherry tomatoes from the farmer's market that were as sweet as candy. Why don't I crave them?

Oh my, I might have to get on this spiralized potato train! I'm not GF, but I find potatoes to be much more filling than dough made of flour. Is that all in my head or has anyone else experienced that?

You guys might like this breakfast I made last weekend, well, it was more like breakfast AND lunch. I was so full all day from it. (I ate a whole potato and two eggs, probably should have only had half!) Twice baked potato with egg on top.

Lunch today is a small smoothie and a hard boiled egg.

noname-potatoes are so filling! Especially sweet potatoes, but I find a whole spiralized potato to be a ton of food! Oh that looks yummy. I like to do something similar with sweet potato egg boats for a quick dinner, just dip out a bit of potato, crack the egg in and bake

munchy-I was thinking of you today when making my lunch. I love how you always bulk up your meals with veggies so I found a way to sneak some more veggies into my meal

I adapted a recipe from skinnytaste for butternut squash and black bean enchiladas. I used corn tortillas and layered it more like a casserole. Also used some different seasonings. And instead of putting any cheese in it I pureed a mix of veggies(munchy inspired me to sneak some extra veggies in!) with some vegan cream cheese and seasonings to create a creamy cheese like filling to go with the butternut squash/black beans mix. Turned out pretty low calorie for a BIG serving. I put some avocado and vegan sour cream on top. I was really hungry today though and wanted a little more after that since I had to push my eating window later than what I'm used to. So I had some plain soy yogurt with a little honey and 3 dark chocolate covered almonds. I was a -4 and ended +3.

Had a catered lunch at work, totally overate! Two small sandwiches (I couldn't even tell you what kind), some roasted veggies and a salad. Stuffed!
