Likewise, I just pan-fry without any oil until it gets (golden) brown. Crispy enough for me. That is for flour tortillas, though. What about corn tortillas?

Oh okay thanks for answering my question, Dont they stick without oil though or does cooking spray help them not stick? Sorry for all of the questions

I use corn tortillas which don't stick at all (and are only 40-50 calories each!). Do you have a non-stick pan? If so, I'd assume the flour tortillas wouldn't stick to that either, but they may in another pan.

Reading this post makes me hungry for Quesadillas. It's funny how some folks say they make it without cheese, hmmm... can you still call it a Quesadilla without cheese? Any rate, I like all the healthier option suggestions. I have a waffle maker that has removable plates so you can turn them around to use the flat side on both plates. Then use to to make crispy Quesadillas without any oil. Works real good.
