Question about cooking dried beans
 
There's a black bean recipe I want to try that says to heat canned beans in a saucepan with onions and garlic. I would be using dried black beans that had been soaked and rinsed. Since there wouldn't be any "can juice," should I add water to the recipe? If so, about how much per portion of beans?

Have you ever cooked beans from dried? Black beans will take a couple hours to cook or shorter if you use a pressure cooker. Some people cook them overnight in a crockpot. When cooking beans, you'll need about 2 cups of water per cup of dried, soaked beans. I'd google for information, I kind of just estimate the amount of water for cooking beans.

If you are just trying to follow the recipe, it isn't a lot of water, maybe 1/4th cup per cup of cooked beans but I'd also add water as you see fit with the recipe.

How to kick the can of beans

Cook them first, then use them as you would in the canned beans. I would definitely go by eye. If your recipe looks dry in the pot, add a little bit of water until it looks right.
