Default My kitchen creativity produced a delish low cal dinner

Just wanted to share... I had a vision of what I wanted for dinner and just started throwing things together in a frying pan and it turned out amazing. Coming from someone who usually has to force veggies even when it has a sauce or cheese, I liked EVERYTHING in this recipe and ate it all no problem.

Here's the recipe if you want to try it out (measurements besides the chicken are approximate)

4 oz boneless chicken breasts (I used 2 tenderloins)
1/8 cup chopped onions
1/4 cup chopped zucchini in halves
1 medium green onion, chopped
1/2 cup cooked brown rice (I used Minute Steamers)
About 1/4 of a large red bell pepper, chopped
2 tbsp Daisy light sour cream
1 tbsp of red wine vinegar
2 tbsp of olive oil
Pepper, basil (optional)

warm the oil in the frying pan on light heat. Once warm add chicken breasts. Once chicken breasts are about cooked through sprinkle with just a little pepper and basil (optional, about 1 tsp each). Add the onions, green onions, zucchinni, and pepper. Let that saute for about 5 minutes, then add 2 tbsp of light sour cream and splashes of red wine vinegar (about 1 tbsp worth). Add cooked brown rice and mix up the sauce until a creamy texture over all chicken and veggies. let simmer just another 2-3 minutes and done! Took me about 25 minutes and it was delicious.

I added it all up on my fitness pal and it came out as 356 calories, 30 carbs, 5g fat, 28g protein, 259 mg sodium, and 6g sugar.

Sounds yummy! I would never think to put sour cream and red wine vinegar together.

Sounds really delicious and like a lot of food for just under 360 calories (was that for each or altogether? Just wanna be sure.)

Sounds yummy! I'll have to try this sometime (do you think plain Greek yogurt would be an acceptable substitute for the sour cream?).
