Oatmeal recipe
 
Has anyone made an oatmeal custard or a mock bread pudding? Yesterday I made some oatmeal and I could see how it could be made like a custard or like a mock bread pudding. I don't experiment much with cooking. I didn't know if anyone has ever made something like that. If so, please share your recipe.

I'm not sure this applies, but I just love steel cut oats made with unsweetened almond milk. It is sooooooooo creamy! I add fresh fruit, and keep changing it up with adding nuts, coconut flakes, dried fruit, etc. I've been on an oatmeal kick lately and will prep four at a time.

I've made this and it's delicious. I don't think it's too diet friendly as it's supposed to be served with cream but we know how to get around that--just don't serve it with cream. :lol: Can't remember where I got this recipe.

Spiced Oatmeal Pudding Bake
* 2 cups cooked oatmeal (made with low-fat milk, omitting salt)
* 2 cups low-fat cottage cheese
* 2 large eggs
* 1 cup low-fat or skim milk
* 6 tablespoons sugar
* 1/2 teaspoon nutmeg
* 1/4 teaspoon allspice
* salt – lightly, to taste
* optional – in equal ratios, a blend of cinnamon & sugar to garnish

Preheat oven to 325 degrees F. Coat a 2-quart baking dish with non-stick cooking spray.

In a large mixing bowl, blend oatmeal, cottage cheese, eggs, milk, sugar, nutmeg, allspice and salt with an electric mixer until smooth. Poor into prepared, 2-quart baking dish and place in a 325 degree F oven; bake for approximately 1 hour or until edges are golden and center is set. Note – Since oven accuracy can vary, I suggest checking this dish at about 45 minutes, and re-checking every 5-10 minutes thereafter until edges are golden and center is set. Serve hot or cold, with fresh milk or cream if desired. For those who prefer their oatmeal a bit sweeter or made with cinnamon, garnish with an equal blend of cinnamon & sugar before serving—it adds a nice touch.

Isabella That recipe sounds awesome! It looks like it would be a good ratio of carbs/protein. Do you know how many servings this makes? (One big one for me? :D)

Diana, I think it made at least 6 normal sized servings. I could eat more than one serving myself. :D This recipe is easily halved because there are no odd measurements and could certainly be lightened up by using Splenda and egg whites. I, personally, can't stand the taste of Splenda so I do sugar. But even if you use sugar it could be cut in half.

ChickieChicks, I make a big pot of oatmeal and my DH and I eat from it for several days. Just zap a bowlful in the microwave. It's so quick and so much, much nicer than that instant stuff (glue) that passes for oatmeal.

Munchy, SkinnyTaste, has some really nice recipes. I've seen that recipe before and thought I'd like to try it as well.

Thank you so much for the replies/links/recipes. I could see me making a dessert out of them. I have a food allergy that prohibits me from eating some of the desserts that my family eats. Also, I prefer something with some protein, so I think Isabella's recipe will work great.
