Red face I'd rather not eat horse feed...

Hey Everyone!

I'm having issues coming up with new healthy things to eat for breakfast.
Does anyone know of a healthy muffin recipe that doesn't taste like horse feed? Lol.
Or any other ideas/recipes would be great too !

Does it have to be a muffin?

These are some of the things I eat for breakfast
- half an avocado and some cold lamb. (I had this yesterday, it was so good!)
- a cold artichoke and 2 hard boiled eggs. (nice in the summer when its hot.)
- whatever I packed for lunch that day (usually a veggie, protein & grain.) Then I make a second lunch to bring to work.
- bagel with goat cheese on one half, avocado on the other.
- eggs scrambled with veggies wrapped in a tortilla
- cheese and crackers and a pear.

None of these taste like horse food!

These are some of the things I eat for breakfast
- oatmeal w/ walnuts, raisins, & cinnamon
- 1 egg, 2 slices turkey bacon, & tomato on whole grain english muffin
- 2 hard-boiled eggs and an apple (or any fruit)
- 6 triscuits spread with laughing cow cheese ( 2 wedges) topped w/ tomato
- Apple, greek yogurt, handful of almonds

I think someone in the Paleo/Primal thread in the carb counters forum posted a healthy muffin recipe.

Here are some of the things I eat for breakfast 90% of the time I eat poached eggs, haha.

Poached Egg, Tomatoes and Roasted Peppers
Poached Egg and High Fiber Whole Wheat English Muffin
1/4 cup Egg Beaters, Diced Tomatoes, Diced Roasted Red Peppers and Ham
1/4 cup Egg Beaters, Diced Tomatoes, Diced Roasted Red Peppers and 1/2 slice American Cheese
1/4 cup Egg Beaters, Diced Tomatoes, Diced Roasted Red Peppers with Tomato and Roasted Red Pepper slices inside

...Everything I eat for breakfast has eggs in it :X

Cold banana omelet w/ unsalted almonds. (I basically use the egg as a tortilla after it cools and stick a sliced banana and unsalted almonds inside to eat.)

Scrambled eggs mixed w/ a lot of chives or mushrooms or onions or bell peppers. I just pick one and stick it in.

2 whole wheat slices of bread + sliced and cored avg size fuji apple +2 tbsp or less of natural peanut butter for a sandwich

Fruit salad: rummaging through the fridge, grab some fruit, chop it up, and mix it together. Add a bit of lemon juice on top.

Two hard-boiled egg whites + half an avocado: I just smash it up and it eat it when I want something creamy for breakfast.

cold hard boiled egg whites + refrigerated strawberries/half a banana in/on top of the eggs: This is probably just a personal preference, but I love it.

Breakfast is my least healthy meal of the day, but I eat the same thing every single weekday because it's my routine, I enjoy it, and it keeps me full until lunch: A 90 calorie Fiber One bar and a venti iced skinny vanilla latte from Starbucks. Pretty carb-y, but I still get 11g protein and 5g of fiber out of those 200 calories.

Weekends it's usually an egg white omelet of some sort with veggies and added protein (chicken, turkey, sausage, etc.).
