I made these for the first time last night and they came out really tasty! Wanted to share.
-I used store bought pie dough for the pastry part. You could make them even healthier by making your own dough.
The box i bought had 2 circles of dough in it, and I got 4-5 empanadas out of each circle (depends how big you want them).
I just used a big coffee mug to trace my circles
You can put just about anything inside for filling. This is what I put in:
-chopped fresh cilantro
-chopped fresh baby spinach (stems removed, personal preference)
-mushrooms, chopped and sauteed
-garlic sauteed, finely chopped
-zucchini, chopped and sauteed
-Rotel tomatoes, drained (tomatoes & chilies)
-lean ground turkey (browned it in a pan first)
-I wanted to put some onion in, but the ones at the store didn't look good
-Also wanted to put jalapenos in, but I forgot.
-Spoon some of the filling into the center of the dough and fold it over and press shut. A lot of mine opened in the oven, but I didn't mind if they looked messy...only cared about how they tasted!
Bake around 8 minutes on each side at 400 degrees, or until lightly golden.
I used a foil lined cookie sheet lightly sprayed with pam.
Best part (for me anyway): After they cooled, I put them in individual snack sized ziplock baggies and stuck them in the freezer. So easy to grab one for part of my lunch or dinner.
