Does anyone have a good deli style chicken salad recipe? I have looked a lot online and not able to really find one I think I will like ...any idea's appreciated.
Thanks,

I haven't tried this recipe, but it's right up my alley with the tang from the white wine vinegar and dijon mustard. If I wanted to make it more traditional, I'd omit the cranberries and almonds for more celery and some onion, and add fresh tarragon or dill. Yum!

chicken breast. (cooked as chicken breast, or in strips, could be merinated, cut up into strips, broiled, cooked in the over, whatever).
lettuce/ spring mix.
whatever veg.
balsamic vinegar, italian dressing, or california dressing.
other little extras i like to toss in: some cut up boiled beets, pepperjack goat cheese, whatever.
depends on how "light" i want the salad to be for my calorie range.
