Default Curry Zucchini

I have a craving for some type of curry. I am thinking about doing a curry zucchini. I have some curry powder and zucchini. I did a search for a simple recipe. All the recipes I have come across have a lot of ingredients and are more than I want to do. I don't have a lot of experience with using curry powder. I use it to make a simple curry chicken salad that I enjoy very much. I am the only one in the house that will eat the curry zucchini, so I'm not wanting anything that's going to be labor/ingredient intensive. Can I just cook the zucchini and then add a little curry powder? Thank you for any assistance you can provide.

It is best if you can cook the curry powder a bit to get rid of the raw taste. Lowest cal way would be spray your pan, add some onion and garlic chopped and cook until soft, sprinkle on the curry and stir stir stir, then add your zuke, stir, cover and let cook till as done as you like.

If you can spare the calories a little coconut milk would be nice. Of courses salt and pepper to taste . A squeeze of lemon would be nice to brighten the taste before serving.

Some addition to Tommy's recipe.
Add some tomatoes if u want grevy or after it cools down add some lowfat plain yogurt

Thank you both for the help. I might have an allergy that involves coconut, so I won't add that. I can do all the other additions. With the yogurt, would it be Greek or regular? Does it change the flavor or just make it a little creamy? TIA

Well the Greek is thicker and less sour so it affects both the thickness of the sauce and the taste. If you use regular (and you are using just a tablespoon or so depending on the amount of veg), do not add lemon juice until you taste to see if it wants more tart. Let us know how it goes. Any leftover woud be great as an addition to an eggwhite or eggbeaters scramble.

Yummy, Yummy, Yummy!

Thank you for all the suggestions! This is what I did.

I sauteed some frozen seasoning blend which is onions, green & red bell peppers, and celery. I added some water, 1/2 teaspoon curry powder and a packet of Herb Ox sodium free chicken bouillon. I cooked this for a few minutes. I sliced 2 large zucchini and cooked it in the above mixture along with some chopped tomatoes. It started thickening up. I tasted it but decided it needed some more curry powder. I sprinkled some more of the curry powder over the mixture. The zucchini wasn't ready yet, anyways, so I was able to cook the curry powder down some. It was so good.

Since I am the only one that ate it, I have some left over. I already have some cooked zucchini and tomatoes in the refrigerator for my omelet tomorrow. I combined both of them in one bowl and will add to my omelet tomorrow morning. I eat zucchini/tomato omelets on a regular basis so this won't be unusual for me. Although, I have never had an omelet with curry.
