Tonight I made another sugar free pudding concoction. It is actually almost double the calories than the sf pudding made by the package directions, but the extra fat makes it very decadent and rich, and I find it more filling. When I have regular sf jello pudding, I want to eat the whole batch (and sometimes end up doing so). When I make it this way, I'm very satisfied with the single portion.
1 can (6 ounce) coconut milk (300 calories)
1.5 cups of skim milk (120 calories)
1 box jello pudding (100 - 140 calories depending on the flavor)
I put the ingredients in a lidded storage container, snap on the lid, and shake like a madwoman for about 5 minutes (more exercise than using a blender or beater)
Put the container in the fridge for about an hour.
1/4 of the recipe = 130 - 135 calories
1/2 bread exchange, 2 fat exchanges
I won't make this as often as the greek yogurt cheesecake, but it was really yummy. I may try it with a combination of skim milk, coconut milk, and water to bring the calories per serving down.
I do that with milk sometimes
Instead of 2 cups of skim milk, I'll use 1 cup of skim milk, and 1 cup of water. The calories per serving come to 45 calories per serving rather than 65-70 calories.
