I'd love to make simple meal prep easier. Is there a kitchen appliance that will cook everything at one time, like fish, rice and veggies?

erm...the only thing I can think of is a steamer, I know you can get steamers with multiple layers, and the best thing is that steaming food keeps all the goodness and nutrients in.

My rice cooker comes with a steamer you put in the top and can cook other items. I haven't used that feature though, so I can't speak to the results.

My sister-in-law bought us a double tiered steamer that is really nice. We put the rice in the bottom and fish/chicken in the top with veggies.

I agree with the others, a steamer with layers is probably your best fit.
