I bought several boxes of Casbah hummus, when I found them on sale.

I mostly used it to make hummus, but I also used it to thicken soups, chilis, stews, and sauces in place of flour or cornstarch. For example, I made an almost instant soup by pouring a can of V-8 or tomato juice (I like Spicy or Picante V-8) into a saucepan, adding a tsp of chicken base (bouillon powder), and some of the hummus powder to thicken.
I've added it to petite diced tomatoes and italian seasoning to make a spaghetti sauce.
I also mixed some of the hummus powder with mashed avocado and salsa or pico de gallo (sort of an instant guacamole/hummus/salsa).
I mixed it with low-calorie mayonaise as a spread on a veggie sandwhich.
