Yummy breakfast

  • I was reading Shape magazine yesterday at the gym and stumbled across and tasty breakfast meal. I made it this morning w/a few modifications and it was absolutely delicious.

    2 egg whites
    1/4 cup baby spinach
    1/4 lowfat feta cheese
    red onion to taste
    mushrooms to taste
    diced tomato to taste


    scramble it all together until the spinach leaves begin to wilt and put scramble on a whole grain tortilla shell.

  • I have made something similiar. Don't add the feta until the eggs have pretty much scambled up otherwise you lose the taste of the cheese (which I looooove)
