Dessert ideas please!

    I am new here and you have all probably suggested loads of ideas before.
    I have just started my diet and want things to work out this time. So I am surfing the net and browsing through books and picking brains for ideas.
    My husband also wants to lose weight but loves his desserts and ends up hating yoghurts and fromage frais. Stewed fruit is not really his thing unless it has loads of custard. Crumbles are fine but loaded with fat, tinned fruit is high in sugar and again is boring after a while. Any ideas? By the way I live in Milton Keynes England.

    Thank you for replying. I will certainly give the site a try. I had not thought about muffins as a dessert. My husband loves them well the chocolate ones in particular but I could get some and have the chocolate ones as a treat.

    The Muffin recipe sounds great but what is apple butter please. Also could you clear up a query I have had for ages, is baking soda the same as bicorbonate of soda. Daft question probably but loads of recipes call for baking soda and I want to be sure I am getting the right think.

    Now I know what apple butter is I can go to the Health food shop and see if they have it. If not I can use concentrated apple sauce.
    I tried out a recipe from the site fatfree.com and it was great. I tried out Apple Fantasy desert.

    2/3 cup flour
    3 tsp baking powder
    1/2 tsp salt (I didn't use it)
    4 egg whites
    1/2 cup sugar
    1/2 cup brown sugar
    3 tsp vanilla
    3 cups chopped apples you can leave skins on ned to be chopped up small though.
    Beat eggs add sugar and vanilla and beat well. Add dry ingredients and mix. Dump in apples and stir until evenly distributed. Bake in deep dish for 45mins at 350. Serve with custard.

    I have no idea what the calorie value is but it tastes great very sweet but my husband loved it and it has no fat at all.
  • I know you said "no yogurt" but maybe someone else will like this easy recipe for creamy parfaits. This ingredient list should make two parfaits:

    1 (svg size) slice angel food cake
    1 container whipped vanilla yogurt (or regular yogurt)
    1 sliced banana

    Divide all ingredients in half and layer in an 8oz glass (in this order): cake, yogurt, bananas, yogurt and top with a spoonful of cereal (Grape Nuts or low fat granola works good). The nutrition information will vary depending on what type of yogurt and cake you use but it's pretty low fat/low cal.

    Of course you can substitute all over the place with this one. Try it with flavored yogurt or a different type of fruit or chocolate angel food cake.

    I have found the absolute best desserts for dieters. Here they are:
    1. "Skinny Cow" frozen ice cream sandwiches, (sooo good);
    2. "No pudge fudge brownies", (made with low fat yogurt only) and available in whole food stores;
    3. "Low Fat Blondie" by Nutricious Creations, (they have a web site).

    I am telling you from LOTS of taste testing!!
  • You can substitute applesauce for the oil in brownies and that makes them much lower in fat. Just use the exact amount. They taste pretty good but are a little different texture. I have yet to find out if this works in cookies or not???

  • This is my "chocolate craving" saver


    1 cup nonfat milk
    1 tablespoon cornstarch
    1 tablespoon cocoa
    3 tablespoons sugar*

    1 teaspoon vanilla extract

    Whisk first four ingredients together in a saucepan (you want to make
    sure that the cornstarch is dissolved!). Turn heat to medium. Cook
    until mixture is hot, stirring the entire time (don't let it boil).
    Turn heat to low and cook until pudding thickens. Remove from heat.
    Stir in vanilla. Enjoy! Great with half a banana sliced up in it too!

    This recipe doesn't get as puddinglike as instant, but even if it totally fails,
    it makes a great thick hot chocolate. Also, according to my calculations, it has
    not much more than 100 calories for AN ENTIRE CUP. It has never failed to cure
    my chocolate cravings.

    *I start with 2 tablespoons sugar and add more to taste. I forget how much was
    in the recipe to start with, but it was too much. You could always
    replace the sugar with splenda too! Unfortunetly it is not availiable
    here where I live (Sweden)

    And here is my favorite "cake"

    Stinas apple cake

    For 10 peices:
    Dough:
    150ml white flour
    100ml whole wheat/graham flour
    100ml white sugar
    2 tsp baking powder
    2 tsp vanilla
    50 g margarine
    100ml lowfat milk

    topping:
    4 medium apples
    2tsp sugar (if needed)
    1tsp cinnamon

    1. Preheat oven to 174C
    2. Mix all dry ingredients, soften margarine in the microwave (soften,
    not melt) and mix together with a whisk. Add milk, and vanilla and mix
    well (no lumps!)
    3. Peel and core the apples, then slice into sections. Put them in a
    plastic bag with a bit of sugar and the cinnamon and shake it so that
    the spice is evenly distributed.
    4. Spray a springform pan with nonstick spray
    5. Spread half the dough over the bottom of the pan. Pour the apples on
    top, and then dot it with the remaining dough, in tsp size clumps.
    6. Bake for 30-35 minutes. Test with a toothpic for done-ness. If it
    comes out clean its done!

    The bottom of the cake may seem quite sticky, due to the extra juice
    from the apples. As there are no eggs in the recipie you dont have to
    worry if it seems a bit undercooked
  • I made this pie for the holildays and still get requests for it.

    key lime pie.
    1 reduced fat graham cracker pie crust
    1 package of sugar free lime jello
    1/4 cup boiling water
    2 containers of fat free key lime yogurt
    1 8oz container of lite coolwhip

    add jello to 1/4 cup of boiling water, and mix and disolve
    whip in the key lime yogurt, then stir in the coolwhip and put in pie crust and chill.

    It is wonderful. 150 calories. makes 8 slices. 3 grams of fat.

  • I have a quick and easy and very low fat recipe for banana pudding.
    It only takes about 10 min. to prepare, and is VERY tasty.

    2 large boxes of instant fat/sugar free vanilla pudding
    1 small container of fat free sour cream
    1large container of fat free cool whip
    3 large bananas
    low fat vanilla wafers

    mix the pudding according to directions on box (use skim milk)
    after pudding sets, mix with sour cream, 3/4 of container of coolwhip
    make sure that you mix very well. you want to make sure that you dont get a bite of just sour cream...
    layer the vanilla wafers, pudding mixture then bananas. When all of the mixture is used up, use the coolwhip left to put on top.
    I think it tastes better if you let it sit in the fridge over night, or for a few hours before serving, but you can eat it right away.

    This is very good. Everyone always ask me to make it when we have a pot luck or gathering. I hope that you like it.
