I made pumpkin muffins with vanilla cake mix and pumpkin once. Too sweet for me but my family loved them.

My mom is diabetic and makes cupcakes with a box of devil's food cake and a can of pumpkin. They are delicious and moist. Can't even taste the pumpkin.

Has anyone had success using applesauce instead of oil in a cake mix? If so, what proportions did you use?

Maybe that would work better than the diet soda, lol.

Made pumpkin muffins tonight with sugar free vanilla cake mix and a can of pumpkin. My husband and I liked them much better than the ones I made with the sugar free devil's food cake. He even had two muffins he liked them so much!

They mostly taste like vanilla cake but finish with a bit of a pumpkin taste.

The recipe made 12 big muffins that were 130 calories a piece.

I have made the diet soda/cake mix several times it always comes out great. I haven/t tried the pumpkin yet but have a can ready when I get the urge. Some time back somebody posted angel food cake with a can of crushed pineapple. Anybody remember it ? I believe that is all the ingredients, Angel food cake mix and a can of pineapple.

I've heard they both work great but I can't pick between the two. Though the pumpkin would obviously provide more nutrition, I'm afraid it will be too dense.

For those of you who have experience with either of these methods, what would you recommend?
I have yused both of these but with pumpkin i use about a 1/3 cup of applesauce too. Both are very good and the soda cake is very light.
happy baking.

I just made brownies with diet coke, and I thought they were done cause the knife came out clean, but man were they GOOEY! I had to get mine out with a spoon cause of the gooey crumbles, lol. It was still edible and delicious though!

I make the cake with the diet pop. My kids (teens) call it sticky cake, and they love it!

Ok, we made brownies with pumpkin, and I like them better than regular. I love the dense chewy texture!
