Can you pre-cook and freeze scrambled eggs?

Yes - warming up the cold ones is what they do at the fast food breakfast places like McD and Subway. Subway does it wthl a patty of egg whites as well. You could do a week's worth on Sunday for all your weekday breakfasts. Just reheat gently in the MW. I have been having good success with lots of items using wax paper. It is cheap. Tear off a piece, lay down the egg patty on one side, fold over, twist ends like salt water taffy and nuke for maybe 20 seconds and let sit a few more seconds to allow heat distribution. Check and do more if needed.

Another vote for reheating frozen mini frittatas/quiche. There's a great recipe in the original South Beach Diet cookbook - they saved me on work days!

I make breakfast burritos with eggs, onion, peppers, meat and cheese. These freeze very well and then just zap in the microwave for 60-70 seconds. Great for when you're in a hurry in the morning and don't have time to cook. I'm going to try some different varieties of filling to go with the egg and cheese this next do around.

you could also mix it up and leave that in the fridge overnight and then just cook it in the mornings -you are probably only adding another 20-30 seconds to the process, and they will taste better. It's definitely possible to overcook eggs in the microwave and reheating them vs. cooking them adds to the chances that will happen.

I think thats fine.. warming up eggs the next day..they might be a little rubbery but still edible..good luck!

I wouldn't recommend it for plain eggs. But I precook egg sandwiches and freeze them. They are better fresh, but it works fine when I'm in a hurry

I am not a morning person and I usually eat breakfast once I get to the office; however, I can't seem to find a lot of healthy choices that I like! I am extremely picky about my food. I think I will give the egg in a mug a try. Does anyone know if you can do it with just egg whites?
