Default Anyone have a healthy recipe for stuffed peppers?

I have never made stuffed peppers before, but I have peppers, brown rice, and ground beef...I can get anything else I need.

Anyone have a good recipe?

I made stuffed peppers with rice and kale. The recipe is from the Eating Well website. It is called Roasted Red Peppers Stuffed with Kale. It is very good.

I don't really have a "recipe" per se, but here is how I make ours.

Brown your hamburger with diced onions and drain. Add brown rice and Spicy V8 juice. Let it simmer until the rice has soaked up all the V8 juice. Add a little parmesan cheese and stir. I core the peppers and add the meat mixture to fill the pepper. I pour the remaining bottle of spicy V8 juice over the peppers, cover and bake in the oven for about 40 min on 350 degrees or until the peppers are as tender as you would like them. I still like mine with a little crunch. Remove the cover and sprinkle with a little more parmesan cheese on the top and let cheese melt.

Sorry I don't have more specific measurements, but it is so easy. The Spicy V8 juice really makes it yummy.
