Best mashed potatoes from instant
 

Tonight I was craving homemade mashed potatoes. Not instant mashed potatoes, not mashed cauliflower. It isn't that I don't like mashed cauliflower, but it's not mashed potatoes. However, I can control myself with mashed cauliflower, while I tend to overeat mashed potatoes (especially homemade).

So, what to do?

I boiled half a head of cauliflower in chicken broth. Drained off most of the broth and used an immersion blender to mash the cauliflower (in the pan). Then I added a bit of skim milk and brought to a simmer and then added 1/2 cup instant mashed potato flakes (the amount listed on the box for two servings). Stirred, took it off the heat, and used the immersion blender again.

Not as low calorie as mashed cauliflower, but still barely more than half the calories of mashed potatoes, and a lot less work than homemade mashed potatoes. The taste and texture resembled homemead mashed potatoes more than mashed cauliflower, and was more filling too.

So absolutely yummy, I don't think I will EVER make mashed potatoes any other way. There was a subtle hint of cauliflower flavor, but the potato flavor dominated.
