Cupcakes or cake
2 egg whites
1 cup sugar- and 1 cup sugar suppliment
2 cups flour
2 teaspoons baking soda
1 20oz can crushed pineapple (make sure it is well crushed) with the juice and all
1 teaspoon vanilla extract
Heat the oven to 350. Spray a 9 by 13 pan or fill cupcake pan with the baking cups. Beat the egg whites and sugar well. Mix flour and baking soda in a seperate bowl, then add to egg mixture. Beat well. Add the whole can of pineapple (juice and all) continuing to mix well. stir in vanilla. pour batter into pan or cupcake cups. Bake for about 40 minutes. Keep an eye on the little guys, they may burn. You can frost with a low fat or nonfat frosting, but they are so sweet, moist, and sticky without frosting that I didn't feel the need...and the best part...0 grams of fat.
