Question Fresh Mozzarella

Does anybody have ideas on what to do with some fresh mozzarella?

I found a two-for-one deal on balls of fresh mozzarella. They are larger balls of cheese (almost the size of a tennis ball), individually wrapped, and in some sort of a brine.

I've sliced them and served them with tomato and basil, but I'm curious about how else people use this. Any ideas?

Thank you ...

I love fresh mozzarella!

We make home made pizzas each Friday night and I like to use it on these. We use a lebanese bread for the base and then top it sparingly with the toppings. Lastly just break up bits of the mozzarella right over the top of the pizza and dollop it in places.

One trick is to make sure you pat it really dry from the brine otherwise it can be too watery especially when there are lots of vegetables on the pizza.

Good luck

You can also slice it, lighly press it into some bread crumbs and bake it. If its fresh and moist you don't need egg or flour to make the bread crumbs stick. Mmmm gooey.
