Default Butternut squash

cut into chunks and roasted in one-cal olive oil spray is my new favourite food.
Even better with some mature cheese grated over it. I prefer to use a little bit of full-fat full-flavour cheese; I can afford the calories on maintenance and I bet you could work it into weight-loss. Anyways, you need some fat and it's a great combination!
Also peppers and onions get in the tray but the squash is omg!

I just roasted one of these bad boys myself this afternoon. Very, very tasty, and can be mixed into soups and the like very easily.

My old Greek grannie used to steam it and mash it, mix it with sauteed onions, rosemary and good aged cheese and then wrap it up in fillo triangles and bake it. And I loved it and couldn't get enough of it! She overdid the olive oil, though. Now you can find whole wheat fillo pastry too.

I cut mine up like fries and toss with olive oil, salt and pepper and roast on a baking sheet in a single layer until the edges are caramelized.
