Cauliflower "Potato" Salad!!!

  • Ok, maybe this is a trick I've missed along the decades of switcheroo tricks for healthy substitutes but I've just discovered making potato-type salad with cauliflower - holy crap it's AWESOME.

    I mashed a boiled egg, threw in a dollop of ultra low fat mayo, 2 cups of cooled down, steamed cauliflower, a pinch of dry dill, couple of tablespoons of chopped green onion and some pepper, mixed it all up and voila!

    With all the different ways you can prep potato salad you can add any twists and flavours you like, the key is the right cooked texture of the cauliflower.

  • I *love* to replace cauliflower where white potatoes are often used. I do it for any number of things.

    I also like to use it instead of rice and pasta, putting whatever sauce or topping often used on them.

  • Wow what a great idea. I have only used cauliflower as a mashed potato substitute.
  • I cauliflower . . . one of the most versatile vegetables known to exist as far as I'm concerned. It can masguarade for just about anything that's white and it's also great by itself either cooked or raw . . .
