Best way to cook a turkey breast?
 
What's the best way to cook a whole turkey breast? Any recipes for cooked turkey breast?

This is one of my favorite dishes to do. I love white meat and get a good sized turkey breast for around $8. It provides at least 2 dinners for me and my wife and a few lunches. Great value.

We use an electric roaster for around 2 to 2 and half hours on 375. We also use an injector thingie. Sometimes inject it with minced hatch green chiles. Sometimes garlic, sometimes rosemarry from our garden, sometime a combination of things. I think my wife also rubs butter on the skin.

Having a roaster is key. Can pick up a good one for around $30 at walmart that also has buffer servers. This is an excellent, excellent habit to get into. Fairly easy, extremely tasty, pretty healthy if you do not eat the skin, great value. And for me a turkey lover, white meat non-processed turkey. Love it.

Turkey breast is one of my favorites too. Way better that the processed deli stuff!!!

I like to use one of those electronic thermometers so that I can kind of put it in the oven and mostly forget about it. I set it to 160 and count on it going up to 165 while it rests. Works for me.

I don't do anything special to prepare it. Just a little olive oil, salt and pepper, and a little paprika.

I brine mine first and then roast them. Breast meat can dry out quickly, so brining helps keep it moist.

Then just put in a small roasting pan in the oven, and cook to 160.
