Mushroom Bacon!
 
My local paper ran a recipe for making sh**ake mushrooms that taste like bacon. You slice about 6 oz of fresh sh**ake mushrooms 1/8 in. thick. Marinate for ten minutes to one hour in 1 1/2 cups soy sauce and 1 tbsp olive oil. (I marinated mine for close to an hour and I think they came out a little salty. Next time I will only marinate for half an hour.) Drain and spread mushrooms in a single layer on a cookie sheet (line the cookie sheet with aluminum foil for easier clean up) and bake at 400 degrees for about ten minutes or until most of the moisture is cooked out of the mushrooms (they will shrink up quite a bit).

I wouldn't say they taste exactly like bacon, but the flavor is surprisingly reminisicent of bacon.

I'd say, try a LOT less soy sauce, add water, mix in a bit of crushed red peppers, some garlic and onion powder and some liquid smoke.

Mmmm, spicy bacony-goodness!

I make tempeh and tofu "bacon" that way. I also add in a little nutritional yeast but most people don't always have that on hand. ;)

What is nutritional yeast?

I'm going to have to try this. Also, you can buy lower sodium soy. To me, it tastes the same but doesn't make me as thirsty because of the lower sodium.

I wonder if this would work with rehydrated shiitake mushrooms.

I ended up tossing most of the soy sauce after marinating the mushrooms (they don't soak it all up) and I only ate a small amount of the mushrooms at a time (I tossed them into salads), so I wasn't worried about the sodium in the soy sauce. But then I don't have any health issues the require a low sodium diet, so I don't generally worry about sodium in my diet. I did use a low sodium soy sauce because that's what I always buy.

The recipe said you could use Bragg Liquid Aminos instead of the soy sauce, but I don't know what those are or have any idea where to find them. Also, no idea if they are any lower in sodium than soy sauce.

I think it would work with rehydrated mushrooms. It's worth a try. Or you could try just adding soy sauce to the water you use to rehydrate the mushrooms (maybe try a 50/50 blend).

Also, I did a big batch and stored them in a tupperware container in the fridge. They lasted a week and probably would have lasted longer but I ate them all up by then.

I have got to try that this weekend. I love bacon but......

I don't care for the bacon substitutes out there. Most of them taste too cardboardy. Turkey bacon just doesn't have the flavor. But since I like soy and love mushrooms, it's worth a try.

Thanks for the suggestion of using the soy for rehydration. I think that may just work.

It worked! I just did the plain recipe with a few shiitakes and it worked! I'm going to try again after we use these up and I will try Soul's suggestions.

Barbara,

Braggs is found at Whole Foods near the soy sauces and other sauces. Regular markets may have it as well.

Censor programs crack me up. The first one I ever saw was ****tail on a recipe board. ****ake is a new one for me. I've also seen assassin as ******in, and couldn't figure out what it was supposed to be (hired killer).
