I found a WONDERFUL dessert/vegetable recipe using zucchini which I had an abundance of. It's super low in calories and tastes pretty good! Almost
like an apple pie!
3 1/2 cups zucchini - peal it, quarter, remove seeds and pulpy part, slice into 1/2 inch pieces, resembling apple slices.
Juice from 1 large lemon.
1/2 c. splenda
1/4 tsp. cornstarch
1/2 tsp. cinnamon
1/4 tsp. nutmeg
I just threw everything in a pot and boiled it (besides the cornstarch). When the zucchini was tender I made a slushie with the cornstarch and a little bit of water and mixed it in until it was thick. It came out great! I just let it cool a little bit and ate it plain. It would be great with some whipped cream or ice cream, but since I'm watching calories still, this was a nice guiltless treat!
Also a side note on the skins and seeds from the zucchini, just save those, chop them up and throw them in a soup. Don't waste it!!!!
