Default Need great, healthy meatloaf recipe!

I was at Whole Foods yesterday and picked up some great, super-lean 7% fat ground beef. My boyfriend loves meatloaf, so I want to make meatloaf tonight! I have an onion, whole wheat crackers, eggs, organic ketchup - all the recipe basics (I think!). Something spicy (I have some chili peppers in adobo sauce) would be ideal.

Thanks in advance!!

Maybe not for this time, but I really like Ina Garten's (Barefoot Contessa) turkey meatloaf. Just google it. I make it and eat what I want, then cool it, slice it and put the slices in the freezer. I can just grab a slice for a meatloaf sandwich - on whole grain bread, of course.

The last meatloaf I made was from Cooking Light and it was a South-West meatloaf and rather spicy (http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=66 5386). With the ingredients you list, you can probably mix it all up and add the chilis in adobo sauce and you'd be good to go. I rarely follow a recipe myself, I just scramble an egg (or two if I have a lot of meat) add the cracker crumbs (or bread crumbs), salt and pepper and onion and green peppers. I only add ketchup if it seems kind of dry.

Kinda late, but actually like Allison, I seldom use an actual recipe. I put my eggs in raw, but am apt to saute my onions since they don't seem to get as soft when cooked in the meatloaf Like the addition of the chiles. How did it turn out?
