Need great, healthy meatloaf recipe!
I was at Whole Foods yesterday and picked up some great, super-lean 7% fat ground beef. My boyfriend loves meatloaf, so I want to make meatloaf tonight! I have an onion, whole wheat crackers, eggs, organic ketchup - all the recipe basics (I think!). Something spicy (I have some chili peppers in adobo sauce) would be ideal.

Maybe not for this time, but I really like Ina Garten's (Barefoot Contessa) turkey meatloaf. Just google it. I make it and eat what I want, then cool it, slice it and put the slices in the freezer. I can just grab a slice for a meatloaf sandwich - on whole grain bread, of course.

The last meatloaf I made was from Cooking Light and it was a South-West meatloaf and rather spicy (http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=66 5386). With the ingredients you list, you can probably mix it all up and add the chilis in adobo sauce and you'd be good to go. I rarely follow a recipe myself, I just scramble an egg (or two if I have a lot of meat) add the cracker crumbs (or bread crumbs), salt and pepper and onion and green peppers. I only add ketchup if it seems kind of dry.

Kinda late, but actually like Allison, I seldom use an actual recipe. I put my eggs in raw, but am apt to saute my onions since they don't seem to get as soft when cooked in the meatloaf :shrug: Like the addition of the chiles. How did it turn out?
