Default mexican food

I'm looking for recipes to make a mexican dinner for out-of-towners. Does anyone have any that are not to hard?

Default Black Bean Quesadillas

Black Bean Quesadillas

1 onion, finely diced
2 cloves garlic, minced
1 (15 ounce) can black beans, drained and mashed
1 green bell pepper, chopped
2 tomatoes, chopped
1/2 (10 ounce) package frozen corn
12 (12 inch) flour FF tortillas
1 cup shredded LF Cheddar cheese

Spray a large skillet with cooking spray and saute the onions and garlic until soft. Mix in beans, bell peppers, tomatoes and corn; cook until heated through.
Place a tortilla on a plate or flat surface, sprinkle some cheese over the entire tortilla. Spoon some of the bean and vegetable mixture over half of cheese-topped torilla. Fold in half.
Heat a large, dru skillet over medium-high heat. Place quesadillas in the skillet and heat just enough to brown both sides and melt the cheese.

Default Mexican Rice

Mexican Rice

1 cup long-grain white rice
1/2 cup chopped onion
2 clove garlic, finely chopped
1 16-oz. jar salsa
1 1/4 cups water
1/2 cup corn


Spray a large saucepan with cooking spray and heat over medium heat. Add rice, onion and garlic; cook, stirring occasionally, for 3 to 4 minutes or until rice is golden. Stir in salsa, water, and corn. Bring to a boil. Reduce heat to low; cook, covered, for 25 to 30 minutes or until liquid is absorbed and rice is tender.

Default 5-Layer Mexican Dip

5-Layer Mexican Dip


1 can FF refried black beans
1 Tbsp. chili powder
1/2 tsp. ground cumin
1 cup FF sour cream
1 cup shredded LF cheddar cheese
1 tomato, chopped
1/3 cup sliced green onions

Mix beans, chili powder and cumin.

Spread onto bottom of 9-inch pie plate.

Top with layers of remaining ingredients; cover. Refrigerate several hours or until well chilled. Serve with baked tortilla chips.

Default Sangria

Sangria

1 bottle red wine
1/4 cup rum
1 thinly sliced lemon
1 thinly sliced orange
1 thinly sliced lime
1 pint thinly sliced strawberries
1 thinly sliced apple
2 cups chilled freshly squeezed orange juice
1 liter chilled lemon-lime soda (i.e. diet sprite)

Mix together the wine, rum, and fruit in a large container. Tightly seal and refrigerate for 4-12 hours. Before serving, add the orange juice and soda. Serve in glasses or in a large pitcher.

Dessert Fruit Tacos

Makes 6 servings

1 1/4 cups chopped apple
1 1/4 cups sliced banana
1 1/4 cups seedless green grapes
1 1/4 cups sliced strawberries
2 tablespoons orange juice
1 package (12) taco shells
1 (8 ounce) container FF strawberry yogurt

Combine fruit and orange juice in large bowl.

Fill taco shells with fruit mixture. Top with yogurt.

Lightbulb chicken and cheese enchiladas


hi flabby: i hope this reciepe is not too late.

1 1/2 cups cubed cooked chicken
1/3 cup each dicd red and green peppers
1/4 cup sliced black olives
2 tbsp parsley
1 cup riccotta chesse
salt and pepper
1 cup salsa diveded
1 pkg (200g) shredded mozzerella cheese
12 tortilla 8"
combine first 6 ingrediants. stir in salt and pepper 1/3 cup salsa 1 1/4 cup mozzerella cheese.
spoon about 1/4 cup of mixture onto center of tortilla, roll place seam side down in a greases 13 x9 dish spoon rest of salsa and cheese .
bake at 350 for 15 - 20 min or till heated through.
