I've always thrown garlic cloves in with my veggies when I roast or grill them outside. They cook through and become delicious.
I love grilled veggies! The idea makes me long for the return of summer (that, and all the veggies that come along with summer.)

If you're too anti-fuss to make the stacks, the recipe would also work as a salad. (The combo of balsamic and goat cheese is to die for!!!)
