Default Trickery and Spinach

I had a small victory last night that I wanted to share. We went to a halloween party and my friends always request I bring my spinach dip (the kind that you put in the pumpernickle bread). Well I LOVE the stuff and had every intention of staying on program, so I modified the recipe. I used FF sour cream and reduced fat mayo. My friends scarfed it up and didn't even miss the fat.

So here is the recipe:

1 package Knorr Vegetable Soup mix (dry packet)
1 box frozen chopped spinach
1 16 oz container FF sour cream
1/4 cup reduced fat mayo
3 chopped scallions

Thaw spinach and squeeze until fairly dry. Mix the rest of the ingredients together and hollow out a pumpernickle loaf. Use the hollowed out bread chunks as dippers.
