Talking Fiber One cereal recipes?

I love the original Fiber One cereal and would love to hear about your favorite recipes using it!

www.hungrygirl.com has several recipes that I have tried and liked. One is a pie crust using this, another is a jalapeno popper recipe. I made those again yesterday and enjoyed it so much. I also tried it on chicken tenders, but it was too sweet for me then. I also love it on yogurt and on salads, for a little crunch.

I make muffins with it. I love them and eat one muffin almost every day.

Fiber One Muffins
  • 1 1/2 cups Fiber One cereal
  • 1/2 cup boiling water
  • 1 cup whole wheat flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup Splenda or sugar
  • 2 tsp pumpkin pie spice
  • 1/4 cup Eggbeaters or egg whites
  • 1/4 cup pumpkin puree
  • 3/4 cup skim milk
  • 2 oz blueberries or diced cherries (optional)

Soak Fiber One in hot water until all the water is absorbed.

Blend dry ingredients together in a bowl (flour, bakiing powder, salt, Splenda, spice). Mix together wet ingredients (Eggbeaters, pumpkin puree, milk) and stir into dry mixture along with Fiber One (and fruit, if using) just until lightly mixed. Do not overstir!

Divide batter into 10 muffins in tin sprayed with PAM and bake at 375 until browned, about 20 minutes.

Per muffin (with splenda and optional fruit): 80 calories, 2.5g fat, 18g carbs (5 g fiber), 3 g protein.

Barbara, this recipe looks fabulous. A nice change of pace. I haven't had a muffin since I started this journey. I think I just might make these. Thanks.

I also use the Fiber One in my yogurt and salads and I often eat it just dry as a snack.

I agree, Robin, that recipe Barbara posted does look great! I'll have to pick up a box tommorrow at the store and try it out. I love raisins and cranberries, so I will definitely be adding those to the batter.

I don't care for Splenda in recipes, though, so I'll just use the regular sugar.

I also like to take Fiber One and put it in my yogurt for a nice crunch.
