Okay...so here's what i made last night...and i LOVE it. Not sure pts/calories etc...but probably not too bad since its veggie...you probably could add some grilled chicken and it would be great too.
I too about a pound of fresh asparagus and several zucchini and mixed them in a bowl with 2 tbsp of olive oil, sea salt, and fresh cracked pepper. I then put them on the grill for a few mintues each side (would also work in oven, but i love the taste of grilling). Then i cooked some spaghetti squash in the oven. I pulled out the strands of spaghetti squash and placed it in a pan sprayed with pam. Added a few cloves of garlic and a can of crushed tomatoes (the one with the basil and oregano added to it) and heated up the squash. I then combined all the ingredients and just added a pinch of fresh grated parmesan cheese. YUM! You think you're eating pasta...but you're not. Its a wonderful side dish...or a great dish in general. It was sooo tasty.
