Lentils saved my life during phase 1- I bought a bag of lentils that was like 2 cups, then put in 8 cups water, I cut up an onion and threw it in there with salt and pepper and curry. I slowly cooked this till the lentils got as soft as I wanted (takes longer than what the package says), then refrigerated it and pulled out portions and heated them- it lasted me all week, I'd eat at least a bowl a day it was good

My mom makes it with rice, but I didn't put rice, you could probably cook it with brown rice if you want more thickness.
