I'm new to this and was wondering what the deal is with wheat gluten. I thought I read somewhere that we're supposed to avoid it in Phase I but practically every veggie burger/crumble product I've checked the NI labels on all state wheat gluten as an ingredient. I have found one brand that doesn't include it but they have a very limited selection and it's burgers only. Any and all comments and suggestions is greatly appreciated. Have a great day.
