1/2 sweet potato/yam, peeled and diced
4 egg whites or eggbeaters equivelent
1/2 red pepper, diced to same size as potato
mushroom, any kind you like
2 teaspoons olive oil
spices (garlic, italian seasoning, hot sauce)
Heat the olive oil over med. heat and add mushrooms. Wait until they have a nice brown color on them, then add onions (mushrooms will made it too soupy if you add WITH onion). Cook for a few minutes then add potato. Cook for 5 minutes. Add red pepper and cook for another 2 minutes. Add egg and seasonsing and stir it up.
Plate and eat
I REALLY missed my Sunday morning breakfast of bacon, eggs over medium and home fries. This was JUST as good! Add a cup of coffee (Phase 2) and yummer!
