Default Meatless Burgers - Phase One

Yield: 8 Large Burgers (or 16 small)

1 lg onion small dice
1 red pepper small dice
1 zucchini small dice
4 clove garlic minced
1-15.5 oz can garbanzo bean (reserve water)
4 cups cooked brown rice, cooled (perfect leftover use)
1 cup of ground uncooked oatmeal
cumin
salt
pepper
red pepper flakes
paprika
oregano
(or instead of these spices, try some Mrs. Dash flavors. The Table Blend adds a bit of spice/hotness to it, Garlic Herb is good, Original is great, Tomato Garlic Basil is great too)

Directions:
Pulse cooked brown rice and garbanzo beans together in food processor. The
mixture will become tacky.
If it becomes too sticky to blend, add a little of the reserved
water from the beans. (if you don’t have one, mash the beans and blend as best you can with the rice)

Mix in all the vegetables with a large fork.

Add all the spices.

Form into 8 patties. Pack them as tightly as possible. It will
stick to your hands a bit. Place on saran covered sheetpan in
freezer for 10 minutes to firm up before grilling.
(Metal sheet pan allows them to freeze more quickly/saran prevents
freezing to pan).

Fry in pan sprayed with Olive Oil Pam or add a bit of Olive oil to the pan.
They crunch & brown up quite nicely.

You can store the mixture in your refrigerator in a covered container (or freezer baggie) instead of making into patties for ease of making them as you want them. (mixture keeps well for 4 days refrigerated) Just add a large spoonful into pan, smash down a bit to make into a round patty and cook til crispy brown on each side. Make them small, as they are very delicate and will break apart easily.

Great with grilled/stir fry veggies on the side. Very filling too.
