Default Easy Crunchy Roasted Chickpeas (Garbanzo Beans) - Phase One

16 oz can of chickpeas, drained and rinsed (or dry garbanzo beans, soaked, drained and rinsed)
Cooking spray (I have been using Olive Oil flavored cooking spray)
Season to taste with salt, pepper, garlic powder

Instructions:
1. Preheat oven to 350F. Lightly coat a rimmed baking sheet with cooking spray.
2. Spread chickpeas on baking sheet.
3. Season to taste
4. Roast chickpeas on bottom rack of oven, shaking the pan every 15 minutes, until brown and crunchy, about 45 - 50 minutes. Maybe longer. They should feel kind of hollow and crisp.
5. Cool before serving.

Variations: Chili powder or other seasonings that you like

NOTE: Several people have tried the recipe and the chickpeas came out chewey rather than crunchy. I found another recipe in vegan cookbook that said to lightly spray the peas and pan fry them on medium heat for 10 mins before baking and that helps them to crisp up. I haven't tried it yet but if you do, please let us know on the list if how it worked for you. Tks!

I actually make these chickpeas a lot (either to snack on or to add some crunch to a salad!) and I find that to get them crispy I just have to bake them a little longer. I taste a few along the way to see if they're getting crisp enough for my liking and if not they're not hurt by staying in the oven a few minutes longer. Just make sure to shake the pan occasionally so they don't burn! They store pretty well in tupperware in the pantry too!

I made these tonight. I had the crunchiness just right, but left them in "just a minute later". Bad mistake.

I just used garlic powder, salt and pepper. I'm going to experiement with other seasonings to see what will turn out.

These are yummy! I seasoned mine with Cajun seasoning and I think I may have left them in too long - they're extra crunchy! It sounds like I'm eating cat food or something. They do make a great snack - but I think I'll take them out of the oven a little earlier next time.
