Default Heather's Smashin' Pancakes

I came up with this recipe yesterday after being tired of omlets, oatmeal, and smoothies. I taste tested it on everyone in my family and it was a hit. Now if I could only come up with a recipe for syrup to go along .This makes 6 pancakes.

1 cup old fashioned oats
1/2 tsp. baking powder
pinch of salt
1 tsp. vanilla extract
3 packets splenda or stevia
3 oz. milk
2 egg whites
1/2 tsp cinnamon

Grind the oats in a coffee grinder ( I got one from Wal-Mart for about $10). Combine oat powder with all the other ingrediants in a bowl and mix well until a batter forms. Spray pan with Pam or lightly oil the pan. Spoon batter into pan (I used a small gravy ladel and it was the perfect amount) and cook over medium heat just like regular pancakes.

Well, I came here looking for info on the diet but had a suggestion for you for your syrup dilemna. What about the all-fruit jams? You could microwave it till it's more of a liquid and they come in many different flavors. Just a thought.

okay bear with me it wasn't fabulous but pretty good...i took frozen strawberries and strawberry low-fat yogurt and heated them on the stove until the strawberries were warm and then mashed most of them with a fork. I put this on top of the pancakes and it was good. I also mashed a banana up in half of the batter and I like them better than just the cinnamon pancakes. Blueberries would be good too! Oh and I just mixed my oatmeal in a regular blender. Thanks for sharing!

another syrup idea, frozen raspberries with a little water and some splenda in a sauce pan til it is warm YUM

good one Lettie!
a couple of other sugar free sweetened with splenda syrup for diabetics...not sure if we can have this on phase one but should be okay phase 11. Warmed apples with sweetner would be good too. I'm making the cookies right now but want the pancakes!
