Pumpkin Oat Cookie/Bar

Ok, I am tired of regular oatmeal and I wanted to change it up a bit, I use my oatmeal (dry) in smoothies or the banana cookies, but I wanted to try something new. This was based off the banana cookie recipe.

1/2 cup dry oatmeal
1/4 cup pumpkin ( I used Trader Joe's organic pumpkin...nothing added)
1/4 cup egg sub
1 packet Splenda
Here is where I just started adding...no specific measurements...
pumpkin pie spice (1 heaping tsp approx)
vanilla extract (1/2 tsp approx)
almond extract (1/4 tsp approx)
cinnamon (1tsp approx)

I sprayed a cookie sheet and then just flattened out the whole thing (it was probably 3 x 7") and I made it about 1/4 inch thick. 375 for 18 minutes...it was yummy and crunchy...I will be having this until I tire of it too!

I made this last night since I had an open can of pumpkin from making pumpkin shakes. I think i didn't spread my batter enough because after 20 minutes I did not have any crunch to it. Very tasty though, i'll make again soon!
